The evening is over, the guests have left... you notice that there is still a little champagne left in one of the bottles uncorked during the meal. It would be such a shame if it ended up down the sink...
What are the solutions to give it a second life? Wasting quality champagne is a pity! To avoid this, Maison Nicolas Feuillatte offers you some suggestions for using the last few centilitres of your bottle wisely. Cocktail ideas, original recipes, deglazing... discover in a few lines how to use an already opened champagne.
What to do with leftover champagne: cocktails
We love champagne best in its simplest form, alone and served in a suitable glass. However, we don't deny ourselves the pleasure of finishing an already opened bottle to make choice cocktails. Champagne wines have this pleasant tendency to enhance other alcohols, sometimes surprising but always exhilarating pairings.
Here are some cocktail recipe ideas for using champagne that's slightly lacking in bubbles:
- Royal Mojito : The same recipe as for a classic Mojito (white rum, lime, cane sugar, mint), with the notable exception of replacing the sparkling water with champagne.
- Bellini : Originally made with Italian Prosecco. In this case, it is replaced with champagne, but always combined with peach puree. Effective and easy to make.
- Kir Royal, in the French tradition. The ultimate aperitif cocktail. As a reminder, crème de cassis is added directly to the glass after serving the champagne. Crème de cassis is used in the original recipe, but the recipe can also be used with other liqueurs.
- Mimosa : Freshly squeezed orange juice and champagne. A must, especially at brunch time.
- Royal Mint :Rosé Champagne added to vodka and spearmint liqueur. Very fresh.
- Champagne soup : The champagne is added after first mixing the Cointreau, lime and cane sugar.
- Recipe for Royal Fig Gin , from our friends Pazapah 💦: Scoop out the pulp from a fig and place it in a glass. Add 1 cl of liquid cane sugar and mix. Pour in lemon juice and 5 cl of gin. Add plenty of ice cubes and top up with Nicolas Feuillatte champagne. Add a lemon slice, a piece of fig, and a sprig of rosemary for decoration. It's ready 🍹
Tip : Make ice cubes with still champagne. This unique and aesthetically pleasing creation will impress your guests.
Some recipe ideas with champagne
Cooking with the leftover champagne is another option. It's impossible not to find a recipe that reuses the leftovers from an already opened bottle.
▪ For lovers of salty flavors, we think of oysters hot or Saint-Jacques snacked, cooked with champagne. The combination of flavors works remarkably well. A great way to start the meal with a remarkable starter.
▪ Otherwise, we can go on all the sauces that accompany poultry and white meats. Associated in particular with mushrooms, champagne will enhance your finest preparations. A suggestion that is obviously valid for Christmas capon.
▪ You can also use the bottom of a bottle to make a risotto high-end, where champagne will replace white wine to bring this dish into a new dimension.
Remember that champagne can also be used to deglaze a dish.
Champagne desserts
What to do with still champagne? Even stale, it can be used in desserts. The famous champagne immediately comes to mind. Champagne Sabayon. This dessert of Italian origin is quite quick to make and has only a few ingredients (egg yolks, caster sugar, vanilla or cinnamon and therefore champagne).
Then, the only limits are creativity and patience, as Champagne wine can be incorporated into many pastry classics. Perhaps it pairs more favorably with red fruits... Let's mention, in no particular order, red fruit tiramisu, strawberry charlotte, but also crème brûlée... when great classics come together, magic happens!
