Elaboration

Blend of 95 % Pinot Noir and 5 % Chardonnay, ths wine is made from grapes grown in organic viticulture, mainly in La Côte des Bar and Les Riceys.

Tasting Notes

  • Appearance: A yellow colour with pretty golden highlights and fine, lively bubbles.
  • Nose: An immediate awareness of fruits. The nose opens on aromas of vine peach, quince jelly, cherry pit and gooseberry.
  • Palate: Notes of grilled toast and warm brioche, punctuated with Mirabelle plums and exotic
    Mangostana. Assertive structure.
    The palate is harmonious and tempers the freshness and verve of the wine, with subtle hints of raspberry and pomegranate. The finish offers surprising minerality.

  • Ideal as an appetizer, with fish roe on black bread toast or homemade cheese puffs.
  • As a starter with smoked salmon gravlax or oysters au gratin with Parmesan cheese.

What is an Extra-brut champagne ?

Extra-Brut Champagne is characterized by its low sugar content. Compared to other types of Champagne, such as Demi-sec and Brut, it has the lowest sugar content. The dosage for Extra-Brut Champagne is set at less than 6 grams per liter.

At what temperature and how should champagne be served?

Depending on when you plan to drink it, the ideal temperature ranges from 7 to 12 degrees Celsius. For an aperitif, a cool temperature of between 7 and 8 degrees is best. For meals, a temperature between 10 and 12 degrees is fine.

Serving champagne: hold the bottle by the base and pour the champagne gently in several stages if necessary. Ideally, champagne should be served in a specific glass, such as our "Absolu" glass.

How long can champagne be stored?

Unlike some wines, champagne is not designed to age indefinitely. However, certain bottles can be kept for several years under optimal conditions.

  • Non-vintage champagne: This type of champagne is generally ready to drink as soon as it is purchased and can be kept for around 2 to 3 years without any loss of quality.
  • Vintage champagne: These champagnes, produced from a single exceptional harvest year, have a longer aging potential. They can be stored for 5 to 10 years, or even longer, depending on the initial aging time of the cuvée.

In both cases, it is important to consume the champagne before its quality begins to decline. The delicate aromas and effervescence can diminish over time, even under the best conditions.

How should I store my bottle of champagne?


To preserve your champagne quality, it is important to store it away from light, at a constant temperature (ideally between 10°C and 12°C). Storing bottles horizontally is ideal to ensure that the cork remains in contact with the liquid.

A well-ventilated cellar with a humidity level between 70% and 85% is the best option.

What is organic Champagne?

First and foremost, the grapes are grown in vineyards that adhere to very specific organic specifications. The golden rule is: no synthetic additives. Only mineral and natural products are used. This requires a great deal of rigor from the winegrowers, who become all the more sensitive to the whims of nature.

The subsequent stages, from pressing to vinification, also comply with very specific specifications. That is why we are involved in every stage of the process and support our winegrowers to help them as much as possible in their conversion. We have been doing this since Nicolas Feuillatte embarked on its organic adventure more than 10 years ago.

Sustainable viticulture

We are committed to supporting and helping our member winegrowers develop sustainable viticulture. Since 1998, we have been offering our member winegrowers a free technical viticulture advisory service to inform them about and support them in adopting new, environmentally friendly techniques.

Support for young winegrowers

We aim at supporting our member winegrowers and developing an increasingly responsible and innovative cooperative business model. Nicolas Feuillatte also offers financial assistance for young member winegrowers to help them setting up their own businesses.

Cork recycling

We collect corks to recycle them into acoustic and thermal insulation panels. The proceeds from the sale of the corks help to finance the integration of people with disabilities.
