Elaboration

This Blanc de Noirs Champagne is made exclusively from Pinot Noir grapes carefully selected from Grand Cru villages in the Montagne
de Reims. It draws its character from the soils, gaining balance and freshness from the gentle
slopes of Verzy and Verzenay, and delicate spices, body and minerality from the chalky soils
on the southern slopes of Bouzy.

Aged at least 6 years in the cellars.

Tasting notes

Appearance: Bronze-tinged, straw-yellow in colour. A fine bead forms a lively column of bubbles in the glass.
Nose: Intensely fruity primary notes reminiscent of late summer fruits - plums and greengages – followed by spices, mild curry and white pepper.
Palate: The champagne reveals impressive structure from the outset. Surprising mineral freshness from the first taste, expressing the
terroir in all its true glory. Appealing notes of redcurrant, cranberry and raspberry caress the palate, paving the way for lemon verbena and Darjeeling tea. As the wine gains in body, notes of hawthorn, brambles and cedar bark come to the fore.
In a surprising finishing touch, the intense wave of flavours subsides to show off its refreshing, saline dimension.

2015 Vintage

After 1976 and 2003, 2015 was the third hottest year since 1951. The drought intensified from mid-May until the second half of August. For three months, Champagne experienced unprecedented heat, which slowed down the development of the grapes.

Unexpectedly, rain fell on the vineyards for a good two weeks after August 15. At the same time, temperatures dropped sharply, limiting the risk of disease. The grapes were able to grow without disrupting the ripening process or the harvest. However, the harvest was closely monitored throughout the appellation in order to obtain optimum potential alcohol levels and ripeness. The grapes are very healthy and the Pinot Noir musts are fruity, clean and powerful.

Food Pairings

Grand Cru Blanc de Noirs 2015 is well-balanced and full-bodied, with all the distinguished elegance of a Grand Cru champagne. Excellent with food, it would make a great partner to risotto Milanaise, roast goose, spicy guineafowl terrine, or even delicately smoky fish such as trout or red mullet.

At what temperature and how should champagne be served?

Depending on when you plan to drink it, the ideal temperature ranges from 7 to 12 degrees Celsius. For an aperitif, a cool temperature of between 7 and 8 degrees is best. For meals, a temperature between 10 and 12 degrees is fine.

Serving champagne: hold the bottle by the base and pour the champagne gently in several stages if necessary. Ideally, champagne should be served in a specific glass, such as our "Absolu" glass.

How long can champagne be stored?

Unlike some wines, champagne is not designed to age indefinitely. However, certain bottles can be kept for several years under optimal conditions.

  • Non-vintage champagne: This type of champagne is generally ready to drink as soon as it is purchased and can be kept for around 2 to 3 years without any loss of quality.
  • Vintage champagne: These champagnes, produced from a single exceptional harvest year, have a longer aging potential. They can be stored for 5 to 10 years, or even longer, depending on the initial aging time of the cuvée.

In both cases, it is important to consume the champagne before its quality begins to decline. The delicate aromas and effervescence can diminish over time, even under the best conditions.

How should I store my bottle of champagne?


To preserve your champagne quality, it is important to store it away from light, at a constant temperature (ideally between 10°C and 12°C). Storing bottles horizontally is ideal to ensure that the cork remains in contact with the liquid.

A well-ventilated cellar with a humidity level between 70% and 85% is the best option.

What is a vintage champagne ?

A vintage champagne is made exclusively from grapes harvested in a single, exceptional year. Unlike non-vintage champagnes, which are blends of wines from several years, these bottles capture the unique essence and reflect the climatic characteristics of their year, offering depth and aromatic complexity that evolve over time.

These bottles are, by definition, rarer.
