What is Blanc de Noirs champagne?

What grape varieties are used? How is it made?

The black grape varieties are used in the production of Blanc de Noirs :

More precisely, the Pinot Noir grape variety and sometimes the Meunier grape are used in the production of this sparkling wine. This champagne is not, however, as dark as the color of the grapes might suggest. During pressing, the juice is protected from the midnight blue coloring of the grapes by meticulously separating them. It thus presents a most elegant gold color. Without maceration, no coloring! For more details, you should know that this champagne follows the precepts of the famous méthode champenoise.

When to drink a Blanc de Noirs champagne?

A major advantage of Blanc de Noirs is that it can be enjoyed at any time of the meal. Its rich flavor allows for numerous pairings. As an aperitif, it goes well with hot appetizers, especially creations based on foie gras or oysters. It can also be enjoyed as an accompaniment to more exotic dishes like shrimp tempura !

The uniqueness of this champagne is revealed in its symbiosis with the meat dishes the richest (poultry, game, stew) or even the mushrooms (morels and truffles). You can even dare to use Blanc de Noirs on dishes as well rustic than terrines, rillettes or even a succulent dry-cured ham.

At the end of the meal, it gives a new dimension to the cheeses soft cheese like Brie or Époisses. For a sweet note, it pairs well with many desserts, from gingerbread madeleines to macaroons and other cream desserts.


How to serve this champagne?

A bottle of Blanc de Noirs should be served lightly less fresh than a classic champagne ( between 9 to 10 degrees , while we generally recommend between 6 and 9 degrees). This round and smooth champagne should not be served too cold. An excessively low temperature alters the flavors and reduces the formation of bubbles in the glass.
To accompany a meal, we recommend serving Blanc de Noirs between 10 and 12°C.

Our advice for the service : 4 hours in the refrigerator are enough for a perfect temperature. A champagne bucket topped with ice cubes ensures a refined presentation while maintaining a satisfactory level of freshness.
