The Art of Vintage Champagnes winemaking

Winemaking is a meticulous process that requires careful attention at every stage. After harvest, the grapes are carefully pressed to extract their juice. The first fermentation turns this juice into still wine. At this stage, each cuvée is vinified separately to preserve the unique characteristics of the different grape varieties and crus.

Wines from the first fermentation are then blended to create the final cuvée. For vintage champagnes, this blend is composed exclusively of wines from the same year, highlighting the expression of the vintage. Once blended, the wine is bottled with yeast and sugar to initiate the second fermentation in the bottle, resulting in a sparkling wine.

This second fermentation is followed by a period of aging on lees, during which bottles rest horizontally in our cellars. For vintage champagnes, this aging period is generally longer than for non-vintage champagnes (minimum 5 years at Nicolas Feuillatte), allowing the wine to develop unparalleled aromatic complexity and depth.
